Connect your Zune and open the Zune program. Click on device>music. Right click on anything you don’t want on your Zune and delete it.

You need to go into your settings if you want your collection to sync exactly the way you want it on the device. You set it to automatically sync. If you do not want it that way and you want to delete then you go to the device on the menu on the left and then delete it manually.
This is just a settings issue that you can correctly really easily by changing the preferences in the settings.
